Must Try White Peach cocktails (boozy and dry)

 

For us, White Peach is the taste of warm weather, sunny days and sharing delicious drinks with friends and family. Whether you like your drinks boozy or dry, we have a drink option to suit your tastes.


White Peach Bellini

This drink is the perfect champagne or prosecco cocktail recipe, and will be sure to wow your guests, without taking away too much time from entertaining.

The recipe is simple, and to adjust it to an alcohol-free recipe, all you need to do is swap the sparkling wine out for an alcohol free option.


INGREDIENTS

1 shot The Curious Cabinet White Peach Shrub Syrup

5 shots champagne/prosecco/sparkling wine

Sprig of mint or rosemary to garnish


METHOD
Fill a spritz glass with ice. Add Shrub Syrup and sparkling wine. Adjust to taste. Garnish and serve.


Sparkling white peach

An easy white peach alcohol-free drink recipe that you can jazz up with some beautiful garnishes or your favourite spirit - if you like it boozy.

We recommend vodka and gin as they pair very nicely with the delicate flavours of the White Peach Shrub Syrup.

INGREDIENTS
1 shot The Curious Cabinet White Peach Shrub Syrup

5 shots soda water

Ice

Garnish, we suggest: rosemary, mint, thyme, sage


METHOD
Fill a tall glass with ice. Add Shrub Syrup and soda water. (Add your spirit of choice if you are having a hard version). Adjust to taste. Add your garnish and serve.

This is a recipe that can be enjoyed in a variety of ways depending on whether you want an alcohol-free, or alcohol version.

INGREDIENTS
1 shot The Curious Cabinet White Peach Shrub Syrup

2 1/2 shots brewed and chilled green tea

Ice

Rosemary


METHOD
To a shaker with ice, add the Shrub Syrup and green tea. Shake until cold. Double strain into a chilled coupe glass and garnish with rosemary.

NOTES

For a cocktail version of this recipe, we recommend adding a shot of gin or vodka to the recipe. For an even harder version, you can take out the green tea.

Spiced Rhubarb Chutney - Bronze medal

I like the spice in this chutney and that it contains rhubarb (I LOVE rhubarb!). It’s a quality preserve that I can feel good about eating as it’s produced from ingredients that would have gone to waste, using renewable energy.

I love that the Curious Cabinet upcycle’s food that would have otherwise gone to waste (reducing greenhouse gas emissions) and that they use solar energy and don’t use gas in their production lines!

Lime Dust - finalist

Sparkling Shrub

 

Our Shrub Syrups with soda water, are a delicious and easy alcohol-free drink. The blend of sugar and fruit with the apple-cider vinegar provides the perfect combination of tart and sweet that will tantalise your tastebuds.

Use your favourite Shrub Syrup flavour in this recipe, and to garnish, see suggested garnishes for each flavour below.


INGREDIENTS

Ice

5 parts soda water

1 part The Curious Cabinet Shrub Syrup

Garnish of choice (see suggestions below)


METHOD
Add ice, soda water and Shrub Syrup to a glass. Stir, add garnish and enjoy.

NOTES

Our ratios above can be tweaked to your liking. Add more Shrub Syrup if you like the taste a bit stronger, or for a lighter flavour add more soda water.

This delicious dust is made from the fruit strained off our Lime Shrub Syrup and sugar. It is zingy yet sweet, and is the perfect garnish for your margarita, desserts and more.

A curiously spiced chutney, made from the fruit strained off our Rhubarb Shrub Syrup. This is perfect for cheese platters, sandwiches or burgers.

The Tarty Ted

 

A citrus alternative to a gin & tonic. This is one that’s so good, the creator’s of the recipe, The Bellarine Distillery, have put it in a can!

  • 60ml The Bellarine Distillery Teddy & The Fox Gin

Add Gin & Shrub Syrup to a glass with lots of ice. Top with soda & a squeeze of lime.

Garnish with lime wheels, Mandarin wheels or a rim of The Curious Cabinet Mandarin Dust. Enjoy!

Starry Night

 

A cocktail so good, you might see stars. Comforting and sweet, you’ll definitely want to enjoy this one by the fire on a starry night.


INGREDIENTS
60ml Cognac

45ml The Curious Cabinet Cherry Shrub Syrup

30ml Red vermouth

2.5ml Absinthe

3 Dashes chocolate bitters


METHOD
Stir all ingredients with ice and strain into a chilled coupe glass. Garnish with a maraschino cherry. Serve.

Key Lime Pie

 

You know you want to! Thanks to our truly amazing photographer, @MandyCouzens for not only coming up with this amazing image, but also creating this delicious pie! Here is how she did it. We’ve listed it in two sections - the base & filling, and then the meringue.

BASE & FILLING
(Recipe sourced from here.)

INGREDIENTS

  • 200g wheatmeal or Granita biscuits

  • 1/4 cup ground almonds

  • 1 tbsp caster sugar

  • 100g butter, melted

  • 4 eggs, lightly beaten

  • 395g can condensed milk

  • 2/3 cup (160ml) cream

  • Zest and juice of 4 limes

METHOD

  • Preheat oven to 170°C. Line base of a 20cm springform tin with baking paper.

  • Process biscuits until fine crumbs. Add almonds , sugar and butter , process until combined. Press mixture firmly into the base and 3cm up sides of tin. Refrigerate.

  • Whisk eggs , milk , cream , lime rind and juice until smooth. Pour into biscuit crust.

  • Place on tray and bake for 40-45 mins or until set. Cool. Top with Meringue (recipe below).

MERINGUE

(Recipe sourced from here)

INGREDIENTS

225ml egg whites (about 6 eggs)

1½ cups (330g) Caster Sugar

1 tbsp cornflour (corn starch)

1½ tsps white vinegar

METHOD

Place the eggwhite in the bowl of an electric mixer and whisk on high speed until soft peaks form.

Add the sugar, 1 tablespoon at a time, whisking until each addition is dissolved before adding more++.

Once all the sugar has been added, scrape down the sides of the bowl and whisk for a further 10–15 minutes or until the mixture is thick and glossy+++.

Place the cornflour and vinegar in a small bowl and mix until smooth.

Add the cornflour mixture to the eggwhite mixture and whisk for 30 seconds or until well combined++++.

Spoon meringue over pie, swirling decoratively. Use a kitchen torch to toast meringue, if desired.

Top with thinly sliced lime wheels and a sprinkling of Lime Dust.

Enjoye!

+ Making meringue is a science. Be sure to measure your ingredients carefully, including the eggwhites as egg sizes do vary. Fresh, room temperature eggs work best – when whisked they’ll become fluffy and voluminous, plus they’re more stable during baking. 
++ Be patient when gradually adding the sugar to the eggwhite. Each tablespoon of sugar should be dissolved before the next is added. 
+++ Take care not to overwhisk the meringue mixture – it’s ready when it’s thick, glossy, smooth and there are no more sugar granules. You can check this by rubbing a little mixture between your thumb and forefinger.  
++++ See the recipes that follow for how to bake this meringue mixture.

TIP
It’s best to avoid making meringue on humid days. Excess humidity can cause meringue to sink during or after baking.

Curious Christmas Mocktails & Cocktails

 

Thanks to The Tea Nomad for these delicious Christmas recipes featuring both our Mandarin and our Cherry Shrub Syrups paired with their delicious Noel Tea.

NOËL SANTA-GRIA (cocktail)

Method: stir all with ice and a sprig of rosemary until super chilled. Then strain into glass and garnish with rosemary. 

NOËL CHERRY SPRITZER (mocktail)

- 6 parts of Noël, cold brewed*

- 1 part The Curious Cabinet Dark Cherry Shrub Syrup

- splash of soda water

This mocktail spritzer is the perfect lunch or picnic accompaniment. The tea and shrub syrup mix can be made ahead of time and kept in the fridge, then served with a slice of orange and a splash of soda water.

*To cold brew Noël, simply add 4 tsp of tea to 1L cold water. Allow to sit for 4+ hours (or just make it the night before).
